 Christmas Cookies - Let's share some recipes

PostSubject: Christmas Cookies - Let's share some recipes   December 10th 2011, 5:53 pm

I'm hoping to make up a few batches of different cookies to package up in tins for holiday gift-giving. Let's share some of our favorite recipes.

Here's one that's a no-bake!





Ingredients

1 3/4 cups white sugar
1/2 cup milk
1/2 cup butter
4 tablespoons unsweetened cocoa powder
1/2 cup creamy peanut butter
3 cups quick-cooking oats
1 teaspoon vanilla extract

Directions

In a medium saucepan, combine sugar, milk, butter, and cocoa.
Bring to a boil, and cook for 1 1/2 minutes. Remove from heat,
and stir in peanut butter, oats, and vanilla.
Drop by teaspoonfuls onto wax paper. Let cool until hardened

Here's one I found on the web - they look great!
I know them to be called Greek wedding cookies.

Oh Carol! I think this is a recipe my MIL used to make! Devin always asks about making cookies that were no-bake, just like these! I wonder if it's the same recipe? I'll have to try them and see what he thinks.

Great idea Carol!

The standard in our house is Sour Cream cookies but I think I posted that year. If you want that one let me know.

This one is a personal favorite of mine that I found when I was a teenager and trying to collect recipes. I'm not sure how close the recipe is to thumbprint cookies but these are easy and I like them.

Swedish Pastry

1/4 cup white sugar
1/2 cup butter
1 egg yolk (save the white for coating)
1 cup flour
Coconut or walnuts
Jam, preserves or other filling

Cream butter and sugar. Add egg yolk. Mix in flour. Form small balls of dough. Roll balls in egg white, then in coconut or walnuts. Push in centers. I usually use the handle of a wooden spoon or a thimble. Bake at 325. Centres may need to be pushed down again during baking. After the cookies cool, fill centres with your choice of filling. I usually use my favorite raspberry jam.

My kids like it when we make "Elf Bellybuttons"

It's just a standard Sugar cookie mix with a box of lime jello powder added in. Then as soon as they come out of the oven, you stick a red hot in the middle of the cookie.

All these recipes look great! Definitelygoing to try them!

Gail they sound great and relatively easy (except for sticking my finger in the oven and pushing them down while baking! LOL). I'm going to try those.

Stephanie, how cute the bellybutton cookies sound. I'm going to tell a friend about those that has little ones.
